Feta & Quinoa Falafel Bites


Don’t let the name fool you – these falafel bites are far from your traditional falafel (the only real similarity is their shape and color). These are a great healthy and vegetarian option to serve at a party or as an appetizer. Or, you could make pita sandwiches with some hearty vegetables. I topped them with my favorite tzaziki-style dip .

  • 2.5 cups cooked quinoa
  • 1 cup feta, crumbled
  • 1.5 cup panko breadcrumbs
  • 4 eggs, beaten
  • 1 tbsp. red pepper flakes
  • 3 tbsp. cooking oil
  • 1 tbsp. salt
  1. Combine the quinoa, eggs, and salt in a large bowl. Stir in the crumbled feta and red pepper flakes and finally, the panko breadcrumbs. Let the mixture sit for a minute or two so the crumbs can absorb some moisture. Now you’re ready to create your falafel bites.
  2. Form as many 1 in. patties as you can (likely between 12 and 20).
  3. Heat 1.5 tbsp. of oil in a large skillet over medium low heat. Wait a few minutes for the oil to fully heat up, and drop in half of your falafel bites. Wait a bit until you see the oil side of your patties turning to a rich golden brown color. Then, carefully flip. Do the same on both sides until you have a nice browned falafel bite.
  4. Top with a dip or sauce of your liking, or serve with a salad. Alternatively, these falafel bites can be refrigerated and saved for up to one week.
